Cốm làng Vòng, thứ quà của lúa nonVòng village cốm, a gift from young rice
Wrapped in a lotus leaf, tied with a strand of straw, green as growing rice. Cốm is the autumn treat Hanoians eat most slowly.

In early autumn, baskets of cốm reappear on Hanoi’s pavements. The seller unfolds a lotus leaf to show a handful of flat, pale green grains that smell of rice fields. Everyone who buys one holds the little parcel with both hands, as if afraid to drop the season.
Hạt lúa chưa kịp chínRice that never quite ripened
Làng Vòng, nay thuộc Cầu Giấy, nổi tiếng nhất với nghề này từ rất lâu đời.Cốm is made from young sticky rice, harvested while the grain is still milky. The rice is toasted in a hot pan, then pounded in a mortar and winnowed again and again until the grains are thin and flat and keep their natural green. Vòng village, now part of Cầu Giấy, has been the most famous for this craft for generations.
The writer Thạch Lam described cốm as "a gift from young rice" in his essays on Hanoi’s thirty-six streets. He advised eating it a little at a time, slowly and thoughtfully. Almost a century later, the advice still holds.
Some foods are not meant to fill you. They are meant to be remembered.
Ăn cốm cho đúng điệuEating cốm the proper way
Hanoians eat cốm with ripe bananas, especially the speckled kind they call "quail egg" bananas. The soft sweetness of the banana and the chewy fragrance of the rice are inseparable. Cốm also goes into pork patties, sticky rice, sweet soup, and bánh cốm, the cake that appears on betrothal trays.
The cốm season is short. If you pass a cốm seller on your way to the house, buy a parcel. Eat it a little at a time, as Thạch Lam advised, and tell us where you found it.
